  • 500g pork sausage (about 1 pack, casing removed)
  • 2 eggs (plus 1 for egg wash)
  • ½ cup bread crumbs
  • ½ bunch fresh parsley, finely chopped
  • 2 cloves garlic, crushed
  • 200g cheddar cheese, grated
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 sheets puff pastry (9x10”)

Instructions

1. Preheat & Prepare

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Make the Filling

In a large bowl, mix together the pork sausage, 2 eggs, bread crumbs, parsley, garlic, cheese, onion powder, thyme, salt, and pepper until fully combined.

3. Roll Out the Puff Pastry

On a lightly floured surface, roll out the puff pastry sheets and cut each into three equal strips, creating six long strips in total.

4. Prepare the Egg Wash

In a small bowl, beat 1 egg to create an egg wash.

5. Assemble the Sausage Rolls

  • Divide the sausage filling into six equal portions.

  • Place a portion of filling along the edge of each pastry strip, shaping it into a log.

  • Roll the pastry over the filling, sealing the edges with egg wash.

6. Cut & Bake

  • Slice each roll into bite-sized pieces (about 1-1.5 inches long).
